Carlito Manzana Is dear friend of mine, Who got me my first kitchen job and has positively influenced my career ever since. He was the Special Projects Sous Chef for The Restaurant At Meadowood before The Tragic Fire In 2020. He's An avid forager (he hates when I call it that lol), and skilled preservationist utilizing various techniques to tell a story about the local produce, the farmers that care for it, and the land it comes from. In this conversation we covered his humble beginnings, and the process he underwent to become the Chef he is today. Ill be having Charlie on for future episodes where we will be discussing his fermentation projects in Greater Detail. However, I felt it Important to let people know where Charlie comes from, who he is and What makes him think the way he does. Truly one of the smartest, creative, most forward-thinking people I've ever met in my life.
